Method of making Murella vegetable

– First of all, wash and clean the murela thoroughly with water. Now cut it into small pieces. It looks like bitter gourd when cut. If it turns red from inside i.e. ripe, then keep it aside.

After cutting, apply salt to this vegetable and leave it for at least 2 hours. This will remove its extra water. It will also become a little soft. Now wash it again with water 2 to 3 times. (If you want, you can leave it overnight with salt and cook it in the morning.)

– Now heat oil in a pan. Put chopped mureela in hot oil and fry it well. Frying it well will enhance its taste and it will cook properly. After frying for 10 minutes or when it is 80% cooked, take it off the pan.

– Now put 2 spoons of oil in the pan. Add half a spoon of cumin seeds and a pinch of asafoetida in it. After this, add dry whole red chillies in it. Also add one or two chopped green chillies in it. You can increase or decrease the amount of chillies according to your taste. More chillies are eaten in Rajasthan, so both types of chillies are used there.

– Now add 2 to 3 chopped onions in it. Onion tastes very good in this vegetable, so keep more onions.
